Veggie soup + Garlic cheese biscuits

Vegetable Soup

2 cloves garlic
1 cup chopped onion
1 tbsp oil
1 can kidney beans
6 cups vegetable broth
1 tbsp Italian seasoning
1 sm can diced tomatoes (~16 oz)
1 lb frozen mixed vegetables
1⁄2 cup dried lentils

Sauté the onion and garlic in the oil for about 5 minutes in a large pot. (You can skip this step if using dried onion.)

Add all the other ingredients to the onion and garlic.

Bring to a boil, lower heat and simmer for at least 10 minutes. Add more broth if needed.

Garlic Cheese Biscuits

2 cups flour
1 tbsp baking powder
1 tsp salt
1 tsp garlic powder
1 tsp Italian seasoning
1⁄4 cup butter (melted) or oil
1cup water
1cup shredded cheese

2 tbsp melted butter

Combine first 8 ingredients.

Drop on a greased cookie sheet.

Bake at 400 degrees for about 15 minutes.

Brush with melted butter as soon as they come out of the oven.
